Fusilli with Spinach and Asiago Cheese

Easy Serves:
4 servings Ingredients
1 pound fusilli pasta
1/4 cup olive oil
1 garlic clove, minced
1 (9-ounce) bag fresh spinach, roughly chopped
8 ounces (1/2 pint) cherry tomatoes, halved
1 cup (about 3 1/2-ounces) grated Asiago
1/2 cup grated Parmesan
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
Directions
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta reserving 1/2 cup of the cooking liquid.
Meanwhile, warm olive oil in a large, heavy skillet over medium-high heat. Add the garlic and cook until fragrant, about 2 minutes. Add the spinach and tomatoes and cook until the spinach wilts, about 2 more minutes. Add the cooked pasta and toss. Add the cheeses, salt, pepper, and the pasta cooking liquid and stir to combine.
Transfer the pasta to a serving plate and serve.
Cheese: Asiago Cheese Dip

Asiago Cheese Dip
1 cup mayonnaise
1 cup sour cream
1/2 cup shredded Asiago cheese plus 1 tbsp
1/4 cup sun-dried julieene tomatoes
1/4 cup green onions, sliced
1/4 cup mushrooms, sliced
Reconstitute sun-dried tomatoes in hot water. Clean, rinse and slice green onions. Rinse and slice mushrooms. Squeeze all the water out of the tomatoes, then julienne into fine strips. Combine all ingredients except tomatoes, then add the sun-dried tomatoes.
Place into oven-proof container. Top with remaining 1 tbsp of Asiago cheese and bake at 350 degrees for about 15 minutes or until bubbly. Serve immediately with toasted beer bread.

SAUSAGE BURGERS WITH HABANERO JACK CHEESE
½ cup mayonnaise
2 teaspoons grated lime zest
1 tablespoon minced canned chipotle chilies in adobo sauce
1 teaspoon fresh lime juice
salt to taste
1 pound Welch and Son Hot Sausage
2½ pounds Bar T Ranch ground beef or turkey (not lean)
4 green onions, chopped
2 teaspoons salt
2 teaspoons ground black pepper
6 large hamburger buns
6 canned mild green chilies
6 ounces Happy Cow Creamery Habenero Jack cheese, grated
In a small bowl, stir together the mayonnaise, lime zest, chipotle chilies and lime juice. Season to taste with salt.
Finely chop the sausage in a food processor. Transfer to a large bowl. Add the ground meat, onions, salt, and pepper. Stir just until blended. Form into six patties.
Prepare barbecue or grill for medium-high heat. Grill hamburgers to desired doneness, about 5 minutes per side for medium-rare (if you are using ground turkey, grill until fully cooked, about 8-10 minutes per side). In the last minute of cooking time, top each burger with cheese. Grill the buns until golden.
Spread one side of each bun with the mayonnaise. Place a burger on each bottom half and top with a green chile. Cover with top halves of buns and serve.

2 Free Range eggs, beaten
8 thick slices of challah or brioche
4 tablespoons unsalted Happy Cow Creamery Butter
8 slices smoked turkey
8 slices smoked ham
8 slices Happy Cow Creamery Maple Syrup Cheddar
maple syrup to top
Preheat the oven to 275F.
Place a large saute pan over medium heat. Pour the beaten eggs into a medium sized baking dish, wide enough to hold 2 slices of bread. Dip two slices of bread into the eggs and coat both sides. Add 1 tablespoon of butter to the saute pan allow to melt. Add the battered bread slices and saute until golden, flipping halfway through to crisp up both sides. Remove the bread slices from a pan to a cutting board.
Build the sandwich by adding 2 slices of turkey, ham, and cheddar. Place the sandwich back in the saute pan (adding a little more butter if needed) and put a heavy plate or pot lid on top of the sandwich to help press it down. After about 2 minutes, flip the sandwich over and cook until the cheese has melted. Place the sandwich on a baking sheet and into the oven to keep warm.

Directions
Preheat oven to 350 degrees F (175 degrees C).
Line a quiche dish or 9 inch pie pan with the 8 ounces of Muenster cheese slices. Carefully press all of the water out of the spinach and place it in a large mixing bowl. Add eggs, Parmesan cheese, cream cheese, salt, pepper and garlic powder; stir well. Spoon mixture into pan and top with remaining cheese slices.
Bake in preheated oven for 35 minutes and allow to set up for 10 minutes before serving. Decrease oven temperature by 25 degrees F if using glass pie dish.

Remove stems from mushrooms; chop stems. Add chopped mushroom stems, breadcrumbs, chopped parsley, salt, freshly ground black pepper, and smoked cheddar cheese to shallot mixture; toss with a fork until blended. Add olive oil and 1 teaspoon water; stir well to combine.
