Recipe for herb crusted chuck roast Ingredients 1/4 cup dry bread crumbs 2 tablespoons olive oil 1 garlic clove, minced 1 teaspoon ground mustard 1 teaspoon dried savory 1 teaspoon pepper 1/2 teaspoon dried rosemary, crushed 1 (3 pound) boneless chuck eye or top blade SAUCE: 1 cup sour cream 3 tablespoons prepared horseradish 1 teaspoon lemon juice 1/4 teaspoon salt Directions In a bowl, combine the first seven ingredients. Rub over entire roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 325 degrees F for 1-1/2 to 2 hours or until meat is tender and reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F). monte cristo sandwiches (serves 4) 2 Free Range eggs, beaten 8 thick slices of challah or brioche 4 tablespoons unsalted Happy Cow Creamery Butter 8 slices smoked turkey 8 slices smoked ham 8 slices Happy Cow Creamery Maple Syrup Cheddar maple syrup to top Preheat the oven to 275F. Place a large saute pan over medium heat. Pour the beaten eggs into a medium sized baking dish, wide enough to hold 2 slices of bread. Dip two slices of bread into the eggs and coat both sides. Add 1 tablespoon of butter to the saute pan allow to melt. Add the battered bread slices and saute until golden, flipping halfway through to crisp up both sides. Remove the bread slices from a pan to a cutting board. Build the sandwich by adding 2 slices of turkey, ham, and cheddar. Place the sandwich back in the saute pan (adding a little more butter if needed) and put a heavy plate or pot lid on top of the sandwich to help press it down. After about 2 minutes, flip the sandwich over and cook until the cheese has melted. Place the sandwich on a baking sheet and into the oven to keep warm. Simmer the "frame" in water with chopped onion, minced garlic, celery, and whatever herbs you desire (sage, thyme, and/or a pinch of rosemary for starts), salt and pepper. Allow this to slowly simmer while you soak in the tub with the rest of the rosemary :0) till the meat is ready to fall off the bones. Allow to cool enough to handle, take a fork to get the tidbits of meat off the bone. You can strain the broth through a sieve, freeze in handy one, two, or more cup portions, and use in recipes. Be sure to freeze some in ice cube trays and pop out into zip lock bags. These will come in handy any time you need a little broth to saute onions, etc, or just to add a touch of flavor to mashed potatoes, veggies, or to make gravies. Use the meat tidbits for chicken salad, gravies, and soups. For low fat, cool the broth in fridge till the fat rises to the top and hardens, then skim off with a spoon. These are fresh eggs which have flaws and are good inside. Originally requested for Stacie's dog, Easy. We feed these to our cats, dogs, and chickens. It may have rained a lot and the eggs were stained by the nest material, or a real odd size pops up. Good way to economize and still get free-ranged, Animal Welfare Approved eggs.

Young hens are just starting to lay. Many folks say that these are the tastiest eggs, and they may well be, as this is the prime of the hen's life: a time when she is healthiest, in her "puberty". The yolk may be a little richer, but I do not know scientific facts on this. Yes, it takes 6 months for a chicken to start laying, and another two months, on the average, to make full-sized eggs. So, now we may begin to see why the cost of eggs continues to rise: We feed the hen for eight months in faith that, in her life-time, she will repay us with her eggs. Each chicken may produce one-half dozen eggs/week, in good conditions and in good health.

These hens tend to lay less eggs per hen than other colored and tinted egg layers. The Araucana is a calm, gentle hen, esyt to be around. Their egg-laying tends to slow in the winter, so, the colored shells are even more rare then.

Here is a photo of our eggs as Donna washes them. Aren't they pretty? Wonderful for fried or boiled eggs. These eggs are considered Grade B, still great for cooking. They are fresh as the Grade A eggs. Some may be odd shaped, different sizes, have rough spots on shells, or have a stain which can't be washed off of the shell. If the size isn't important, why not order some for your breakfast?
